i would like to operate an extractor fan by dimmer switch!
i looking for relay or contactor which can work between 100v-230v!

Whats that switching voltages, or the voltage of the control circuit?
 
why on this earth do you want to operate a fan from a dimmer switch?

There are loads of relays that operate on 12 - 240v. Get a TD version as a run on timer. Use the dimmer onto A1 and put your fan across N/O contacts. Go on RS and have a look.
