I have installed a external ethernet cable through outside wall into a mortar joint.
Will the concrete damage the cable?

If it is normal Ethernet cable it might do, it is not waterproof or UV light resistant.
You would be better putting in a small section of conduit (basically plastic pipe) through the mortar, sloping slightly downwards to the outside so water runs out, and put your cable through that. Also allows you to replace the cable later without brickwork!
