I have to design a unit which utilizes both 24V and 110V for lighting. We will supply these voltages by using a dual type transformer. The 24V will supply an alarm and heat tracing whereas the 110V will supply a lighting circuit. Should I install a contactor or a relay to protect from under voltage for the lighting?
 
Why is it necessary to 'protect' the lighting circuit from under voltage? To offer any help to the parts you cannot workout for yourself we would need your full design brief!

depending on your current load you could use both
for example you can use a relay for small lighting requirements such as a couple of lights.
but if you want to control bay lighting in a warehouse or a lot of lights you should use a contactors controlled by a relay
(3 pole contactors) you can control multiple supplies this way
