if the holes line up use a conduit box or a round dry lining box.
 
what's it going to be mounted on? wall, ceiling, brick,dry line?

I would just drill and screw the the fittings to the wall, leaving enough room behind for connections

In this case I would simply chop a small hole into the brick to shove the connector block into and amount the light directly over the hole...
Looks like the only thing I can do but it's not good practice is it

it's how thousands of wall lights are fitted. the connections are accessible just by unscrewing the fitting.
 
you could fit a flush architrave box vertical to house the connections, then drill and plug fixings each side to mount the fitting.
