Doing an EICR on a commercial install, there’s a copper pipe comes down a pipe chase with the stop cock fitted onto it, it’s then pvc pipes that come out the other side and these are fitted onto the sink, does it require to be bonded??

Depends if it an extraneous conductive part, measure ir from pipe to met, I use 23K ohms as allowing 10 ma of fault current to flow.
GN8 gives more information about this and other values that you could use.

I understand your question and it can be a can of worms, on the one hand as mentioned in your previous reply is it a extraneous conductive part, that said a photo would be nice, if it were my house and the pipe a decent length I would probably bond it, lets see a photo of it, purely to keep us amused on this Friday night
