The following light fitting from Dumelm takes GU10 but states "Dimmable No" but I can't see why with the correct dimmer switch and dimmable GU10 Lamps/Bulbs why this fitting wouldn't be dimmable?

I think what they are saying is there is no provision for dimming in the fitting.
as you say, with the correct lamps and dimmer sw, it could be dimmed.

there are no active components in the fitting, just wires from terminals to lamp sockets.
