Hi > I need advice regarding an extractor fan that is in the kitchen hood which has stopped working . I have been told it is old and the whole thing needs to be replaced . Is this the only option I have ?

anything can be repaired, it is just figuring out if the parts and labour are less than replacing it with a new one.

With older commercial kitchen extract fans you should be able to replace just the motor, bladeset or diaphragm plate. That said there's often severe corrosion and grease and even fatigue cracks on the motor pad mounts or the casing which makes it financially more viable to just replace the entire fan unit.

Also downtime is often a big consideration where the kitchen may be closed for a day or two whilst an old unit is rebuilt compared with a few hours downtime for a new replacement fan.
