I've got a job to do remotely which requires taking 3 employees with me to stay overnight for possibly 2-3 nights away from home.

What do you think would be reasonable to expect to pay them for this?

Obviously I will be organising the accommodation including paying for breakfast and evening meal for us and will be paying them overtime as we will probably be working after 5pm to get the job done quick.

Just wondering what you would expect to get paid on top of that for the inconvenience.

I have done this LOADS while employed, & dealt with this as an employer.
In the UK it is hours worked at rates agreed i.e. relevant agreed o/t rates for overtime evening meal with a small incidentals allowance which is defined by HMRC, overnight (room) and breakfast, plus daytime food as it is not possible to organise this from home if you are not there.
HMRC have guidance on this.
Check JIB website also.
 
A few decades ago when I worked in the UK we used to get something called 'subsistance' pay when we worked away from our local areas. As far as I can remember this rate was negotiated on an industry by industry basis by the unions......like I say, a long time ago though.
