From my experience a mature apprentice is a lot more enthusiastic to learn. Unfortunately you have to pay them more per hour, but once they've got enough experience to work on their own you can book them out at a higher rate.

Can you afford to offer your time for free for a couple of days to some local companies. It's a good way to show how keen you are.
Once they've seen that and how good you are they might be a bit more understanding and able to work around you if they can see it as a future investment to them.
