Hi all. Looking for advice on upgrading bathroom lights from MR16 to mains fed suitably IP rated GU10 LED lights. As partly shown on the picture attached, the existing lights are in 4 rows of two lights with each pair of lights fed off one transformer. I'm thinking easiest option is just to disconnect each transformer from its associated junction box and then run 1.5mm sq 2-core cable from the junction box to each 1st light and then onto 2nd light in the pair. Anyone think there is a better way?

Two core and earth would be better.
when I say better, I mean necessary.

as long as the transformers are removed and all conductors are correctly terminated and enclosed it’s irrelevant how you do it? What ever is easier for you.

all on one long string.
two strings
three.….
one junction box with several cables coming out, one to each light.

Your choice. Keep it simple.

In my opinion the absolute easiest way is to spend a bit on QuikWire prewired plug and sockets. While it would add £30 to costs it makes the job such a doddle with minimal time in the loft, almost all of the wiring done before you go up there.
