Nowadays the standard depth is about 10 feet cross laid covering everything in sight!......seriously though a few legnths of 4x2 or something nailed above the insulation as running boards will enable your main runs to be kept clear. Thats about all you can do.
 
Well what i tend to do is to run the main cable as close to the edge of the roof where the ceiling joins the apex , this way its not in the way of any flooring then where the cables run along the ceilig joists clip and cable tie at least 50mm from the ceiling , so that floors can be laid i have in the past use half guttering over the cables to protect from the insulation , but ill be honest its almost an impossability to avoide it so what i do now is take into consideration the insulation when designing the circuit so that the cable sizes are sufficient handling capacity to cope with the heat dissipation even if that does mean larger cables at the end of the day we cant design for increases in insulation depths
