3 phase steam oven conversion

I have retired from Solar installs and now finally looking to do my retirement project - Daimler V8 2.5.
I needed some powder coating done but the cost for a few small items was ridiculous so I got into the DIY side.
I found myself a 3 phase commercial steam oven (FINOX) which is massive so well able to take the largest items. As the steam function had failed I got it for a song as no kitchen was going to buy it. I only have single phase supply. The aim was to get a large insulated oven into which I could fit simple 240v elements and a controller.
Upon investigation I discovered the 3 phase function was purely for the massive fan which sprays water into the oven. The elements (6 x 3kw!!!) were 240v and the controls were 12v. So I am thinking if I remove the fan and 4 of the heating elements I can run the oven on 240v single phase. All the controls, relays and contactors are clearly marked so I can see what is what voltage. Is this as simple as this? If I can't draw more than 6kw through the elements and the other controls are low voltage it should work fine?

Even though the motor was three phase it is likely the six elements were connected in star across the three phase supply but there is no reason why it cannot be reconfigured to single phase.
