Hello I’m confused about the amount of wires for a cooker hood that need fitting into a speed control switch and then into fused spur. I’ll attach some photos but can you guys please help me on how to wire this?

eliminating the gn/y as E, the you kave 3 Ls and a N. these 3 Ls will be 3 speeds. trial and error or bang.do you feel lucky punk? :p:p:p.
 
If the capacitor is integral to the motor, then the MI's for a similar model from the same series confirm that there are four lines for four speeds, plus N & E, but it doesn't say which colour is which speed. I would take a few resistance readings to confirm that the blue wire really is N, and test them, although you may well also be able to confirm which L is which speed as they will probably be in order of resistance to N.

If there is no capacitor on the motor itself, then it will need to be in the terminal box and the above does not apply as one lead will be for the capacitor winding.

Identifying the correct terminals on the switch is a matter of 2 mins with a continuity tester. If you find three separate N/O contacts, obviously connect one end of each of them to line and the other end to one of the speeds. Park the line for the unused speed.
