GoPro + headband = easy shooting.
Easy shooting * lots to do = editing overload.
You offering to sort it all out?

Get one of the GoPro that you can turn the recording On/Off with a fob.
Or just upload everything and let the viewers skip the bits they want.
You would have to send me big files to edit, if I was going to do it. Then I've got to send them back.
I do basic editing for my daughters YouTube channel, but thats about it. Nothing really flash.
 
I suspect the 'raw' filming will actually be more interesting and entertaining. Perhaps set a 3 to 5 minute time limit (maximum) and see how much you cover - that would allow coverage of up to 5 items of technology(say) every minute with some historical background, technical explanation or piece of fascination to be talked about. A clock ticks away in one corner of shot. No doubt you could do that off-the-cuff after a few minutes prep'. And then a link to your on-line museum for more.

I couldn't find a GoPro but I think I've got a solution for the head-worn camera...

the only thing i can edit down is a pint of beer. goes from 20 fl.oz. to nothing in seconds.
