I currently have a 2 gang switch outside the bathroom - one for the light and one for the extractor:

I'd like to change the way it works slightly so that the extractor comes on if either the extractor switch is turned on or the light switch is turned on. I was wondering if anyone could offer any advice on if/how this is usually done?

I don’t see why you would want to wire it a different way? It’s perfect the way it is.
Independent switches so you can have light without fan for a quick visit to the loo, fan with light, for showering.... fan without light to clear the room without having the light on.

what you want is possible, but you would either need a double pole switch in place of the light switch, or a relay somewhere.

I’m going to start an argument with my esteemed colleagues and say the 3 core and earth to the 3 pole isolator has the wrong colours. Black should sleeved brown as switch and grey Should be sleeved blue as neutral (black and grey mixed up)
