Some timber ,holes drilled to suit different sizes and screw a screw so the point is just in the hole and pull through should strip the insulation off ??

A manual one for ten pounds on e bay will be fine.. Stripping cable is a skill. It is slow and laborious work for an amateur. As a beginner on domestic 1 mm and 2.5mm you will be earning below the minimum wage. Though if you have nothing better to do, why not.
