Batteries are DC devices. The terminals are usually referred to as Positive and Negative, and yes, in some circumstances it would be good practice to fuse both.

It looks as if the van already has a 12V leisure battery and associated charging arrangement. You haven't said what that is used for, and if you still need it. But it's of no use to you for the 24V...
It might. But it won't affect your statutory rights, which are nearly always more effective than a warranty. Warranties, especially 12 month ones, are usually there to browbeat you into foregoing your rights under the SoG act.
