Not 100% sure on the requirements for RCD protection of outbuildings. I am going to run 10mm2 SWA, about a 20m Run, to a sub board in the outbuilding, buried in the ground. The main house is on a TN-S, and the outbuilding will have a 32Amp hot tub, a few small fridges, a couple TV's, sockets and lights. Do I have to RCD protect the supply from the main board in the house, or can I just protect my individual circuits from the sub board?

If the SWA is installed correctly then there's no need to provide that sub circuit with RCD protection, but you absolutely WILL need it for all circuits being fed. Also - check manufacturers requirements for supplies and earthing regards the hot tub.
 
and get some deeper pockets for when the leccy bill comes, powering that glorified pond.
