From the OP point of view it would have been better to have all wiring, plasterboarding, skimming, decorating, testing and second fix done in one day and all back boxes flush and level. Clearly the builder/electrician knew this as well would learn both trades otherwise?
If they did it they would certainly deserve their 2 grand for a days work!

Coming back to reality... In all seriousness unless you wrote "time is of the essence" in the contract having kicked them off the job you've breached the contract not them.
