Existing dimmer switch wiring in attached picture. Hot and neutral in, ground wire, extra red wire that, I believe, carries the signal voltage. This controls a dimmable LED overhead light fixture with only hot and neutral wires.

I want to replace the dimmer with a normal, single pole light switch.

Can I and, if so, how would it be wired?

I'm stumped, quite frankly.

It's probably hot and neutral in and controlled / switched hot out to the light. The new switch would connect between the supply hot and switched hot. The neutral would be left capped off with a wirenut as it is not needed.
 
Your existing switch looks to be three way, the two reds a likely to be travelers. Is there another switch controlling the same light. From what I can see there is no neutral at that switch.
