Hello!
I have a 320 amp service (400 amps) in a main panel. I want to create a subpanel 1,000 feet away with a 200 amp service there. Can someone tell me what size wires to run, if aluminum or copper, and how many wires? For, say a 3% voltage drop? How would you do it?

Employ someone that is competent. to do the install and design for you
 
I will be employing someone to help. But I don't need to be up-charged for the materials. Thats why I would like to find out what folks recommend for cable sizing.
The site, the incoming supply characteristics, the cable run and the distribution requirements will need assessing by a professional electrician to determine what type and size of cable is required. This will be an expensive run of cable and should be designed properly.

No spark is going to use bigger cable than necessary.

I’ll tell you # 3/0 copper to each panel. You will need 2 # 3/0 for your hots, one 3/0 for your neutral and one # 6 ground
