I assume I can just use separate positive and negative cables

Was thinking if it would work to use alarm cable to extend red and black however what colours are suitable for purple and green as these are not in the alarm cable wiring
 
To be honest, you don’t really need to follow the cable colours that closely.
It is advisable to use red and black as +ve and -ve, but the others…. not as important.
As long as you know what goes where.

You could write on the wiring diagram you’re using whatever colours the wires are in reality.

CAT5 cable is 8 core, so there will be spares.
 
I would use alarm cable for the setup in the OP

With systems like Paxton I use a mix of Cat 5 for the network devices and readers and alarm cable for the locks or locking devices
