pound notes are still green in Scotland.... and are still legal tender.....
as are groats, guineas and bags of corn.....
'Legal tender' is a world of boredom, but notes issued by Scottish and Northern Irish banks are not legal tender and issuing banks must maintain assets at least equal to value to notes in circulation as a form of guarantee.
Oddly enough I recall that Bank of England notes are only considered to be legal tender in England and Wales.
I could google more information, but can already feel myself nodding off
Additional trivia... the first polyer banknote issued in the UK was the the George Best commerative £5, issued by Northern Bank.
