Hi,

I have a coaxial wall plate that is hanging off the wall and needs replacing. How do I wire the old plate which has an IN and OUT for the two cables to the new plate with only one connection?

You don't ! You either get another dual connection plate, or if only one cable is actually required you wire that one to the single plate and carefully coil the spare cable in the box behind it in case things change and you need it again.
