My plan is to but a switch above the bathroom door to isolate the extractor fan. In cutting out a part of the stud wall for the backbox I've noticed it has what google is telling me is 'paramount board' behind it.

Is it ok to cut away the small amount necessary to get this back box in and feed the cable down? Or should this remain untouched?

I'm fairly certain I'm ok to cut the small square in this but I just want to confirm since I have a level of (healthy) paranoia.

Seems ok to me, but if the wall is full of it, you’ll have a job getting the cable through.

it’s not like it’s a double skin of board for a fire break or anything.

is this inside or outside the bathroom?

It's above the bathroom door (outside of the bathroom).

I was thinking the cable could be fed through the holes in the structure, it's easily accessible from the loft so should be able to push it through (I think). Only needs to travel 4 or 5 inches.
 
This is a prefab wall, two layers of plasterboard with a corrugated structure to hold them together. Briefly popular round here a few decades ago, possibly you can still buy it.

You can cut away whatever you need to fit a mounting box. You will likely need to push larger holes through to get to the loft / void above the door, again within reason should not be a problem.

Be thankful you haven't instead got a compressed straw prefab wall, they were also briefly popular round here at one point!
