Could someone please explain how the cables work on a cheeta kitchen extract fan. I am a ac engineer gone onto HVAC with my new job. I recently replaced fan but don't understand how the wires work. It's a single phase fan but with 3 lives but not 3phase because they are lower voltage but the cheeta is 3phase. Don't understand why it's 3 phase because it's just an air sensor switch. Any help would be great about this subject and anything else about kitchen ventilation would be great. Thanks.
 
Your info is confusing. Can you provide a link so we can see the fan or even better can you attach a photo of the wiring diagram that probably come in the lid of the terminal box?
