This isn't a bad place to be and I'm sure there are some gentlemen here - but I've yet to stumble across one...........
On your three phase question, a phase rotation meter can be used.
For quite a few pieces of plant, phase rotation isn't important. Three phase motors is one application where it does matter. The "suck it and see" method is commonly used. For this, the motor should be uncoupled from the load. Connect the three phases to the motor and start it. If it runs in the correct direction, fine and dandy. If it runs the wrong way, simply reverse any two of the three motor phases. It doesn't matter which two so whatever is easiest works.
Just a point on safety that is just common sense. But it would be remiss of me not to mention it. Before you commence ANY work on the motor connections, make sure that the starter is off and locked off. Preferably with your own personal padlock and that the key is in your possession.
There may be a few more hoops to get through that you would be used to with domestic work. Just ask if there is anything you need help or clarification on. There is a broad pool of experience here.
You may be aware that we now use the (horrible) harmonised wire colours for three phase but there is still a lot of plant out there with the old (sensible) Red, Yellow, Blue, Black. Here's a diagram of the interface between the two systems.
